Diabetic Cooking Video: Eggplant Parmigiana

In this video, Tova demonstrates a recipe sent in by one of DSK’s viewers-many thanks to Sally Roman! This is a great eggplant parmigiana and an easy from-scratch marinara sauce. The parm features substitutes for breadcrumbs and olive oil to create a truly healthy dish that will add healthy unsaturated fat into your diet but still provide the taste and texture of true parmigiana that we all know and love! Try using the “breadcrumbs” in this video to make chicken or veal cutlets, too!

  4. Although I am not myself diabetic, I have a few people in my family who are truly diabetic or borderline. I am going to send them to your blog because it gives some great tips on how to cook with the diabetic in mind.

    But I also see where you can use these recipes even for those of us who are not diabetic. It’s never a bad idea to eat healthier!

    Have to agree with Stevie…looks yumm.
    Eggpland is one of my favourite side dishes with my rice and currys.

    Will have to get my wife to watch the video as I am not much of a cook.
